The Arashiyama 6000 is my go-to finishing stone for high carbon steel knives. It’s smooth, fast, and gives you a clean, toothy edge that holds up. Works especially well with Japanese steels like Shirogami and Aogami.
It’s on the softer side, so it’s really easy to use—great for thinning wide bevels or bringing out contrast in core polishing. Just watch your angle; it’ll gouge if you’re sloppy.
This stone can be used as a splash and go if you prefer a harder surface, or soaked briefly if you’d like it to feel a little softer under the blade.
If you’re pairing stones, the Arashiyama 1000 and 6000 make a solid combo. That setup will handle just about everything you need for keeping your high carbon knives sharp.
