A well-balanced, do-it-all Gyuto with some serious style. This 210mm Sakai Kikumori is made from VG10 stainless steel, which means low maintenance, solid edge retention, and easy care. Perfect if you want performance without the fuss of high carbon upkeep.

It’s thin behind the edge, sharp out of the box, and nimble in the hand. The 48mm heel gives you a bit of knuckle clearance, and at 186g it has enough weight to feel confident without being heavy. A great choice whether you’re upgrading your first knife or adding to a growing rotation.

The real standout here is the handle. Ebony and blonde buffalo horn, not only beautiful to look at but gives the knife a refined, high-end feel in hand.

We endeavor to provide precise measurements and accurate photographs of our products. However, owing to the handcrafted nature of many items, slight variations may occur.

Please Note: Our Japanese knives are crafted for precision and fine slicing. They are not suitable for cutting bones, frozen foods, or other hard items. To preserve the edge, always use on soft cutting surfaces such as wood or high-quality plastic — never on glass, stone, or metal boards, which can chip or damage the blade.

Sakai Kikumori

Sakai Kikumori has been working with some of Japan’s top blacksmiths since 1926. Originally founded as a knife wholesaler, they built strong relationships with skilled makers in Sakai and beyond. What sets them apart is their ability to collaborate directly with individual craftspeople to create unique and high-quality kitchen knives.

Being a smaller company gives them the freedom to do things differently. Instead of mass production or chasing trends, they focus on producing knives that stand out for their performance, build quality, and attention to detail. Many of the knives they bring to market come from close partnerships with traditional blacksmiths and sharpeners. These knives are made with purpose and designed for real use.

Over time, Sakai Kikumori has developed its own lines that reflect both deep tradition and a willingness to innovate. The quality of these collaborations speaks for itself. These are well-made tools meant to be used and appreciated by people who care about cooking.

We carry a selection of Sakai Kikumori knives that show what they do best by blending classic Japanese craftsmanship with thoughtful design and practical performance.
