Forged in Sakai by renowned blacksmith Satoshi Nakagawa, this 240mm gyuto is built for cooks who value control, efficiency, and refined cutting performance at scale.

The blade is forged from Ginsan (Silver 3) stainless steel, offering a clean, stable edge with excellent retention and easy sharpening. A hand-applied tsuchime (hammered) finish reduces food adhesion while giving the knife a restrained, work-focused aesthetic.

With its longer blade length, this gyuto excels at high-volume prep, smooth slicing, and confident push cuts — gliding effortlessly through vegetables and proteins alike. Despite its size, it remains thin behind the edge and well balanced, never feeling unwieldy in hand.

Paired with a striking Ebony & Blonde buffalo horn wa handle, the knife offers a comfortable grip and natural balance, making long prep sessions feel controlled and fluid.

A serious gyuto for cooks who want reach, precision, and uncompromising craftsmanship.

We endeavor to provide precise measurements and accurate photographs of our products. However, owing to the handcrafted nature of many items, slight variations may occur.

Please Note: Our Japanese knives are crafted for precision and fine slicing. They are not suitable for cutting bones, frozen foods, or other hard items. To preserve the edge, always use on soft cutting surfaces such as wood or high-quality plastic — never on glass, stone, or metal boards, which can chip or damage the blade.

Sakai Kikumori

Sakai Kikumori has been working with some of Japan’s top blacksmiths since 1926. Originally founded as a knife wholesaler, they built strong relationships with skilled makers in Sakai and beyond. What sets them apart is their ability to collaborate directly with individual craftspeople to create unique and high-quality kitchen knives.

Being a smaller company gives them the freedom to do things differently. Instead of mass production or chasing trends, they focus on producing knives that stand out for their performance, build quality, and attention to detail. Many of the knives they bring to market come from close partnerships with traditional blacksmiths and sharpeners. These knives are made with purpose and designed for real use.

Over time, Sakai Kikumori has developed its own lines that reflect both deep tradition and a willingness to innovate. The quality of these collaborations speaks for itself. These are well-made tools meant to be used and appreciated by people who care about cooking.

We carry a selection of Sakai Kikumori knives that show what they do best by blending classic Japanese craftsmanship with thoughtful design and practical performance.
