The Masakage Koishi Nakiri 165mm is a beautifully handcrafted Japanese vegetable knife forged by renowned blacksmith Yoshimi Kato in Echizen, Japan. Named Koishi (小石), meaning "small pebbles," the blade features a distinctive kurouchi finish inspired by the texture of river stones, giving each knife a unique, rustic appearance while showcasing the artistry of traditional Japanese bladesmithing.

At its heart is Aogami Super (Blue Super) carbon steel, one of Japan's most respected blade steels. Known for its exceptional edge retention, remarkable sharpness, and excellent cutting feel, Aogami Super delivers effortless performance through everything from delicate herbs to dense root vegetables. The stainless steel cladding helps reduce maintenance while leaving the exposed cutting edge free to develop a natural patina over time.

Designed specifically for vegetable preparation, the 165mm Nakiri features a tall, flat blade profile that excels at push cutting and chopping. Its straight edge maintains full contact with the cutting board, producing clean, precise cuts without the rocking motion associated with Western chef's knives.

The knife is fitted with a traditional octagonal cherry wood wa handle with a black pakkawood ferrule, providing a lightweight, comfortable grip and excellent balance. The classic Japanese handle enhances control while perfectly complementing the handcrafted blade.

As part of the highly regarded Masakage Koishi series, each knife reflects Yoshimi Kato's dedication to traditional forging techniques, premium materials, and meticulous craftsmanship. Combining outstanding cutting performance with a distinctive handcrafted finish, the Koishi Nakiri is an exceptional choice for professional chefs and passionate home cooks alike.

We endeavor to provide precise measurements and accurate photographs of our products. However, owing to the handcrafted nature of many items, slight variations may occur.

Please Note: Our Japanese knives are crafted for precision and fine slicing. They are not suitable for cutting bones, frozen foods, or other hard items. To preserve the edge, always use on soft cutting surfaces such as wood or high-quality plastic — never on glass, stone, or metal boards, which can chip or damage the blade.
