Forged in Sakai by renowned blacksmith Satoshi Nakagawa for Sakai Kikumori, this Kasumi White #1 Stainless Clad Gyuto 210mm blends traditional carbon steel performance with the convenience of stainless cladding.

The core is forged from Shirogami #1 (White #1) carbon steel, celebrated for its exceptional sharpness, fine grain structure, and ease of sharpening. Stainless cladding protects the blade's sides from corrosion while leaving the exposed carbon steel edge to deliver the crisp, responsive cutting feel that White #1 is known for.

At 210mm, this gyuto is a versatile all-purpose chef's knife, equally at home slicing proteins, preparing vegetables, and tackling everyday kitchen tasks. Thin behind the edge and expertly balanced, it offers effortless cutting performance with excellent feedback and precision.

Fitted with a traditional Magnolia wa handle, the knife feels lightweight and comfortable in hand, creating a natural balance that makes extended prep sessions enjoyable.

A beautifully understated gyuto that combines Sakai Kikumori's renowned craftsmanship, Satoshi Nakagawa's exceptional forging, and the outstanding cutting performance of White #1 carbon steel.

We endeavor to provide precise measurements and accurate photographs of our products. However, owing to the handcrafted nature of many items, slight variations may occur.

Please Note: Our Japanese knives are crafted for precision and fine slicing. They are not suitable for cutting bones, frozen foods, or other hard items. To preserve the edge, always use on soft cutting surfaces such as wood or high-quality plastic — never on glass, stone, or metal boards, which can chip or damage the blade.

Sakai Kikumori

Sakai Kikumori has been working with some of Japan’s top blacksmiths since 1926. Originally founded as a knife wholesaler, they built strong relationships with skilled makers in Sakai and beyond. What sets them apart is their ability to collaborate directly with individual craftspeople to create unique and high-quality kitchen knives.

Being a smaller company gives them the freedom to do things differently. Instead of mass production or chasing trends, they focus on producing knives that stand out for their performance, build quality, and attention to detail. Many of the knives they bring to market come from close partnerships with traditional blacksmiths and sharpeners. These knives are made with purpose and designed for real use.

Over time, Sakai Kikumori has developed its own lines that reflect both deep tradition and a willingness to innovate. The quality of these collaborations speaks for itself. These are well-made tools meant to be used and appreciated by people who care about cooking.

We carry a selection of Sakai Kikumori knives that show what they do best by blending classic Japanese craftsmanship with thoughtful design and practical performance.
