The Sakai Kikumori Shironiko Deba 165mm is a traditional single bevel knife crafted for precise fish preparation, combining the time-honoured craftsmanship of Sakai with exceptional cutting performance.

Forged from Shirogami #2 (White #2) carbon steel, the blade is renowned for taking an incredibly sharp edge while remaining easy to sharpen and maintain. Its thick spine and sturdy construction provide the strength needed for breaking down whole fish, while the finely ground edge allows for clean filleting and precise detail work with minimal effort.

The 165mm blade is an excellent all-round size, offering superb control for preparing small to medium-sized fish while remaining agile enough for intricate work. As with all traditional deba, it is designed for fish preparation and should not be used to cut through large or hard bones.

Finished with a traditional Magnolia wood handle and Black Buffalo Horn ferrule, the knife feels lightweight, comfortable, and naturally balanced, making it ideal for both professional chefs and dedicated home cooks.
