The Sakai Kikumori Shironiko Deba 210mm is a traditional single bevel knife crafted for breaking down whole fish with precision and confidence. Built in Sakai using time-honoured techniques, it is designed for chefs who demand power, durability, and exceptional edge performance.

Forged from Shirogami #2 (White #2) carbon steel, the blade takes an incredibly keen edge and is prized for its ease of sharpening and outstanding cutting feel. Its thick spine and substantial weight provide the strength needed to work cleanly through fish heads, collars, and small bones, while the finely ground edge delivers delicate, precise filleting.

The 210mm blade offers extra reach and control for processing larger fish, making it an excellent choice for professional kitchens and serious enthusiasts alike. Like all traditional deba, it is intended for fish preparation and should not be used for cutting through large or hard bones.

Fitted with a classic Magnolia wood handle and Black Buffalo Horn ferrule, the knife offers a comfortable, lightweight grip that balances naturally with the blade, making extended preparation both controlled and comfortable.
