Use Case

For routine knife maintenance, start with the #1000 when the knife has become noticeably dull and needs its edge restored. Once a consistent edge has been established, move to the #5000 to refine and polish the edge.

For regular maintenance, the #5000 can often be used on its own when the knife only needs light refinement rather than significant edge restoration.

For best long-term performance, pair the stones with a suitable flattening plate and keep both sharpening surfaces flat.
