Designed by renowned Japanese knife maker and sharpener Kotetsu Shibata, the Shibata The Bitey Finisher Combination Stone #600/1200 Grit is a unique finishing stone developed to produce Shibata's signature "bitey" edge. Unlike traditional combination stones designed to establish a new edge, The Bitey Finisher uses a gentler abrasive to refine and polish an existing edge while preserving the geometry of your microbevel.
The Bitey Finisher is built around a technique known as differential grit sharpening, where each side of the knife is finished on a different grit. By finishing one side of the edge on #600 grit and the other on #1200 grit, the stone creates Shibata's signature "bitey" edge. The resulting microscopic tooth structure grips ingredients exceptionally well, making it ideal for slicing tomatoes, peppers, onions, proteins, and other foods with tough or slippery skins, while also maintaining excellent edge life.
Recommended Sharpening Method
- Soak the stone in clean water for approximately 10 minutes before use.
- On the #600 grit side, sharpen one side of the knife until a burr forms, then repeat on the opposite side.
- Continue alternating sides on the #600 grit until only a small burr remains.
- Repeat the same process on the #1200 grit side.

Once the edge has been refined, begin differential grit sharpening:
- Make one light heel-to-tip stroke on the left side of the blade using the #600 grit.
- Flip the stone and make one light heel-to-tip stroke on the right side of the blade using the #1200 grit.
- Repeat this alternating process 3 to 4 times, always keeping the left side on #600 grit and the right side on #1200 grit.
- Finish by gently stropping the knife on leather or denim to remove any remaining burr.
Following this method produces a beautifully aggressive working edge that bites into food effortlessly while offering longer-lasting cutting performance than a highly polished edge.
