Forged in Sakai by master blacksmith Satoshi Nakagawa, this 210mm gyuto is a modern expression of traditional Japanese craftsmanship.

The blade is crafted from Ginsan (Silver 3) stainless steel, prized for its fine grain, excellent edge retention, and ease of sharpening — delivering carbon-like performance with the practicality of stainless. A hand-applied tsuchime (hammered) finish reduces food sticking while adding a subtle, tactile character to the blade.

Balanced, thin behind the edge, and effortlessly precise, this gyuto excels at everyday kitchen work — from fine vegetable prep to clean, controlled protein slicing. It’s a true all-rounder for cooks who value feel, sharpness, and refinement over flash.

Finished with a striking Ebony & Blonde buffalo horn wa handle, the knife offers a comfortable, natural grip and beautiful contrast, completing a piece that feels as considered as it is capable.

A knife made for those who appreciate quiet excellence — sharp, balanced, and built to be used.

We endeavor to provide precise measurements and accurate photographs of our products. However, owing to the handcrafted nature of many items, slight variations may occur.

Please Note: Our Japanese knives are crafted for precision and fine slicing. They are not suitable for cutting bones, frozen foods, or other hard items. To preserve the edge, always use on soft cutting surfaces such as wood or high-quality plastic — never on glass, stone, or metal boards, which can chip or damage the blade.

Sakai Kikumori

Sakai Kikumori has been working with some of Japan’s top blacksmiths since 1926. Originally founded as a knife wholesaler, they built strong relationships with skilled makers in Sakai and beyond. What sets them apart is their ability to collaborate directly with individual craftspeople to create unique and high-quality kitchen knives.

Being a smaller company gives them the freedom to do things differently. Instead of mass production or chasing trends, they focus on producing knives that stand out for their performance, build quality, and attention to detail. Many of the knives they bring to market come from close partnerships with traditional blacksmiths and sharpeners. These knives are made with purpose and designed for real use.

Over time, Sakai Kikumori has developed its own lines that reflect both deep tradition and a willingness to innovate. The quality of these collaborations speaks for itself. These are well-made tools meant to be used and appreciated by people who care about cooking.

We carry a selection of Sakai Kikumori knives that show what they do best by blending classic Japanese craftsmanship with thoughtful design and practical performance.
